Spiced Carrot and White Chocolate Cookies
These Spiced Carrot and White Chocolate Cookies are the perfect treat for when you're craving something sweet with a hint of spice. Thanks to JUX’s Ginger and Carrot, you get that warming flavour in every bite, and the addition of white chocolate takes these cookies to a whole new level of indulgence. They’re soft, spiced, and absolutely irresistible!
Ingredients:
- 120g butter
- 120g caster sugar
- 160g brown sugar
- 1 egg
- 2 tsp vanilla
- 1 tbsp cinnamon
- 1 tsp JUX Ginger
- 2 tsp JUX Carrot
- 1/2 tsp nutmeg
- 1/2 tsp ground cloves
- 1/2 tsp all spice
- Small pinch of ground black pepper
- 100g white chocolate
- 1/2 tsp bicarbonate soda
- 160g plain flour
- Baking paper
Method:

Preheat the oven: Set your oven to 180°C and line an oven tray with baking paper.

Mix the wet ingredients: Combine the sugar with melted butter in a bowl, then stir in the egg and mix well.

Add the spices and carrot: Stir in the vanilla, JUX Ginger, JUX Carrot, and the remaining spices (cinnamon, nutmeg, cloves, allspice, and black pepper).

Add the chocolate and flour: Break the white chocolate into chunks, reserving 12-16 for the tops of the cookies. Roughly chop the remaining chocolate and stir it into the dough along with the plain flour and bicarbonate soda.

Shape the dough: Stir everything together to form a dough. Then, roll the dough into 12-16 balls, leaving space between each ball on the baking tray as they will spread in the oven. Press a chunk of white chocolate into the top of each ball.

Bake: Pop the cookies in the oven and bake for 8 minutes, or until golden. Let them cool slightly before devouring!
