Classic Chicken Pie

Here’s a classic comfort dish that’s made quick and simple, thanks to JUX! This Chicken Pie brings all the flavour you love in a hearty homemade pie, but with less prep and more ease. Using JUX’s freeze-dried super ingredients, like garlic, onion, and broccoli, means you get all the flavours and health benefits of fresh food, with none of the hassle. Plus, it’s all wrapped up in buttery, flaky puff pastry—what's not to love?

Ingredients:

  • 500g chicken thigh fillet
  • 2 large leeks, finely chopped
  • 3 tbsp JUX White Onion
  • 1 tbsp JUX Garlic
  • 1 tbsp JUX Parsley
  • 2 tbsp JUX Broccoli
  • 100ml single cream
  • 50g grated cheddar
  • 1 sheet puff pastry
  • Olive oil
  • Salt and pepper to taste

Method:

  1. Preheat the oven: Set your oven to 180°C and get ready for the pie magic!

  2. Cook the chicken: Cut the chicken into bite-sized chunks and fry them off in an ovenproof frying pan with a little olive oil. Once the chicken starts to brown, add the JUX Garlic, JUX White Onion, and a splash of water. Season with a generous pinch of salt and pepper, and cook for about 1 minute.

  3. Add the leeks and seasoning: Stir in the chopped leeks, grated cheddar, JUX Broccoli Powder, JUX Parsley, and single cream. Cook everything together for another 2-3 minutes, and add a splash more water to loosen the mixture if needed.

  4. Assemble the pie: Cover the pan with a sheet of puff pastry, cutting off the excess. Crimp the edges and pierce a hole in the middle to let the steam escape. Use any leftover pastry to get creative and make fun designs on top of your pie!

  5. Egg wash and bake: Beat an egg and brush it over the top of the pie. Bake in the oven for 20-25 minutes, or until the pastry is golden and crisp.
