Whether you're fighting off a cold or simply craving something satisfying, this soup is sure to hit the spot.
Ingredients:
- Small whole chicken
- 3 tbsp JUX Ginger
- 2 tbsp JUX Garlic
- 2 tbsp JUX White Onion
- 2 tbsp Miso Paste
- Vermicelli noodles (serves 2-3)
- 2-3 soft boiled eggs
- 2-3 handfuls of beansprouts
- Chilli oil to serve
Method:
-
Cook the chicken broth: Add the whole chicken, miso paste, JUX Garlic, JUX Ginger, and JUX White Onion to a large pot. Pour in enough water to completely submerge the chicken. Cover and simmer on a low heat for at least one hour (you can go up to 3 hours for a richer flavour).
-
Cook the vermicelli noodles: In a large heatproof bowl, cover the vermicelli noodles with boiling water. Put a lid on the bowl and let them cook for 7-9 minutes.
-
Strain the broth: Once the broth is ready, remove the pot from the heat. Strain the broth, keeping the liquid and the chicken separate. Pull the chicken apart into bite-sized chunks and set aside.
-
Assemble the soup: In a bowl, arrange the cooked vermicelli noodles, shredded chicken, and fresh beansprouts. Ladle the hot broth over the top.
-
Finish and serve: Top each bowl with a soft-boiled egg and a generous spoonful of chilli oil for that spicy kick.
